If relevant, remove the skin from the salmon. Take out any small pin bones and cut salmon into 1-inch (2 cm) chunks.

If making fresh stock place 1 litre of water, fish skin, washed carrot peelings and ends of leek, and a pinch of salt in a separate pan and bring to the boil. Reduce the heat and let it simmer gently for 10 minutes.

Melt the butter in a large saucepan over a medium heat and gently fry the leeks for around 10 minutes, stirring regularly, until soft. Be careful not to brown them.

Add the carrots and potatoes and fry for a further minute.

If making, strain the stock and add to the pan. If using ready made stock just add it to the pan.

Add half of the chopped dill and simmer for 10 minutes, or until the potatoes are just tender.

Add the salmon pieces, cream and ground allspice. Let the soup simmer gently over a low heat until the salmon is just cooked through—this will only take a few minutes

Stir in the remaining dill, season with salt and pepper to taste, and serve warm with crusty bread, or if available rye bread.
